Our Head Chef

Matt Dare joined us in July 2009 after 10 years experience in various two AA rosette Restaurants and Hotels, most notably The Westcote Inn and Wyck Hill House.

His accomplished and memorable food is distinguished by clear flavours, which combine classic and modern styles.

His suppliers are predominantly local and organic. They include local meat from Watermoor Meats of Burford and organic fruit and vegetables from A M Bailey of Stratford. His fish is delivered daily, overnight, from Looe Harbour in Cornwall by Flying Fish.

Our Restaurant Manager

Marc LePlumey has been with The Mill for 4 years and has built an extensive wine and champagne list. With 10 years of experience as a Restaurant Manager, he is dedicated to ensuring all of our guests are looked after at the highest level.

Serving national brands and local hook norton beers, the highest quality malt whiskies and a wide choice of brandies and liqueurs; Marc is always ready to meet your every need.
